Why the category decides the answer

Gummy slurries are deposited hot, typically around 80-90°C, and hard candy is cooked far hotter before acid is added late. Most finished confectionery lands at pH 3-3.8, and much of it sits in clear film or jars.

Blue is the hardest natural shade to buy. Every option is either pH-limited, heat-limited or expensive, and the choice is usually decided by the pH of the system rather than by the shade itself.

  • Heat is the tight constraint: the pack rates it "Poor, sustained temperatures above ~60-70°C denature it; short HTST with quick cool can survive at higher pH", against a process where deposits and cooks run hot, though the hold at temperature is short. The pack still lists it for confectionery, so this hinges on where in the process the colour is added: after the heat step it is viable, through it is not.
  • pH rules it out: "Best pH 4.5-8; below ~pH 4 the protein denatures/precipitates and color fades, a core beverage limitation", against a category that is acidic, usually ph 3.0-3.8 from citric or malic acid added late in the process.

How to test this at the bench

  1. 1Lock the colour spec first. Measure the current Blue 1 product in CIELAB (L*a*b*) and agree the tolerance with marketing before any bench work. "Close enough" arguments after the fact kill more timelines than stability failures do.
  2. 2Screen the top two candidates above at three dosages each, in the real matrix. Pigment strength varies enough between suppliers that a spec sheet will not tell you the use level.
  3. 3Run the stability triangle on the survivors: target pH, the full heat process, and a light chamber or windowsill test. Most natural-colour failures are stability, not shade.
  4. 4Dose to end-of-shelf-life, not day one. Natural colours fade, so confirm the day-one product is not oversaturated once you have.
  5. 5Re-taste blind against the incumbent. A shade change alters perceived flavour intensity even when the flavour system is untouched, so check whether you need a congruent top-note lift.
